Brindisi (Puglia), metodo classico dosaggio zero

Quality sparkling wine produced using the Traditional Method (Zero Dosage). Blend of 80% Negroamaro and 20% Chardonnay. The Negroamaro grapes are vinified as a white wine, with immediate separation of the skins, gentle pressing, and rapid cold static clarification. The first fermentation takes place in stainless steel tanks for 20 days, followed by approximately 5 months of aging in stainless steel. Secondary fermentation occurs in the bottle according to the Traditional Method. The wine is aged on the lees for a minimum of 6 months, followed by approximately 3 months of post-disgorgement aging before release. Alc. 12.5% vol.

Diecimiglia is a place where you can enjoy the treasures that belong to us and the intimate tranquility that only the seaside towns can offer. Diecimiglia means ten miles, like the distance that indicates navigators have arrived in the safe and peaceful port of Brindisi: a true reference point!

We appropriately accommodate the Italian laws by indicating frozen foods, allergens and products that underwent blast chilling processes in our menu.

Dishes marked with (*) are prepared with frozen raw materials.

Both fresh products of animal origin and fishery products – marked with (**) – underwent a blast chiller process in order to guarantee the quality and safety described in the HACCP plan pursuant to EC Reg. 852/2004 and 853/2004.

Customers should communicate to the staff any need to consume food free of specific allergenic substances before commanding.

During food preparation, there could be contamination. Therefore, our dishes could contain the following allergenic substances pursuant to EU Reg. 1169/2011: fish and fish-based products, shellfish and shellfish-based products, crustaceans and crustacean-based products, cereals containing gluten, eggs and egg-based products, soy and soy-based products, milk and milk-based products, sulphur dioxide and sulphites, shell fruit, celery and celery-based products, lupin beans and lupin bean-based products, peanuts and peanut-based products, mustard and mustard-based products, sesame seeds.
